Crunchy Noodle Salad

This is the recipe from the Changs noodle packet with a few additions to bulk up the veggie content…


1 Chinese cabbage shredded finely
6 Spring onions or ½ small red onion sliced thinly
1 Carrot grated
1 sml Red capsicum (seeds and membrane removed) finely diced
50 gm Snow peas finely sliced
2 sticks celery finely sliced
100 gm slivered onions lightly toasted
100 gm packet fried noodles


Toss all ingredients except noodles together in large bowl. Add dressing and noodles just before serving and mix to combine.


¼ cup white vinegar
¼ cup caster sugar
1 tbsp soy sauce
2 tsp sesame oil
½ cup olive oil


Combine all the dressing ingredients in a saucepan and heat on low till sugar dissolves.

Allow to cool.

This makes more than is needed for 1 salad, so keep remaining dressing refrigerated for use later.
